We are just starting to dig our sweet potatoes.....anyone have any good recipes?

  1. The way we usually cook our sweet potatoes are baked whole in the oven at 350 till tender and then served with butter and possibly a little brown sugar.  I added a sweet potato to my bowl of gumbo last week!  Beth also makes a really good sweet potato casserole...with a really tasty crunchy brown sugar nut topping.   My grandmother Mama Nell from Alabama makes the casserole with marsh mellows.

    This isn't *my* recipe but someone else's. We loved it so much we made it 2 days in a row! If you don't any beans, sauteed onion and sweet potato went fabulously on a bed of quinoa!

    I also like to bake them and put cooked black beans (seasoned with cumin and coriander) in the middle.  You can top with a dollop of sour cream or yogurt if you like.

  4. I like to just roast them.


    Ingredients
    • 4 cups of sweet potatoes, peeled and cubed
    • 3 tbsp vegetable oil
    • 1 tbsp sugar
    • 1 1/2 tbsp salt
    • 1 tsp black pepper
    Method
    Line baking sheet with foil, spray foil with cooking spray.  Toss sweet potatoes with other ingredients and place in baking sheet in single layer.  Roast at 400-425 for 45 minutes.  Halfway through cooking, stir and toss sweet potatoes. 

    It's a nice combination of salt and sweet.

    Wash, cut into chunks, toss with garlic, olive oil, salt pepper and a handful of chopped rosemary.  Bake for about 25 minutes in a 400 degree oven.

    We also like to do a mash with a mix of sweet and butter potatoes.  Just wash the potatoes, steam until tender and mash with butter, heavy cream, salt & pepper.  You can also all a little roasted garlic for some extra yum.

    I also like to eat my sweet potatoes baked whole and then topped with a dollop of sour cream mixed with maple syrup (sweetened to taste.) Simple and yummy.

    My daughters love them peeled and cut into wedges with a little olive oil and salt and baked at 400 degrees until soft - 30 minutes or so.
