I just made this last night and it was really good. I looked at some recipes online and subsituted for what I had on hand. Even my greens-hating husband like this.
Wilted Sweet Potato Greens
Ingredients
1 Tbsp vegetable oil
1/2 onion, chopped
1 clove of garlic, minced
1 pinch red pepper flake (more if you like it hot, we don't)
1/2 tsp salt
1/4 tsp ground black pepper
1 bunch sweet potato greens
1-2 Tbsp low-sodium soy sauce
Heat skillet over meduim heat. Add onion and sweat 3-5 minutes or until they start to soften. Add garlic, red pepper flake, salt and pepper and sweat 2-3 minutes more.
Add the sweet potato greens and toss well with ingredients. Cook 5 minutes or just until greens are soft and wilted. Add soy sauce, toss, then serve.
