I subbed kohlrabi root and greens for broccoli in a broccoli cheese soup recipe and added bacon (because bacon!) http://csaforthree.com/2012/01/10/more-fun-with-kohlrabi-kohlrabi-cheese-soup-with-bacon/ If it's too thick you can thin it with a little milk. It was especially good on the second day, but needed to be thinned out just a little. We had it with toasted focaccia on the side and it was delicious.
