1 boboli crust or fresh crust of your choice&#60;br /&#62;
1 large sweet onion, halved and sliced&#60;br /&#62;
2 fennel bulbs, sliced&#60;br /&#62;
1 tbsp butter&#60;br /&#62;
1 tbsp olive oil&#60;br /&#62;
salt&#60;br /&#62;
sugar&#60;br /&#62;
balsamic vinegar&#60;br /&#62;
1 cup crumbled goat cheese&#60;/p&#62;
&#60;p&#62;Melt butter with oil in a dutch oven and add fennel and onion. Cook&#60;br /&#62;
over medium heat for 1/2 to 1 hour, stirring regularly until soft and&#60;br /&#62;
caramelized. You can add a dash of sugar to aid the process. Season with&#60;br /&#62;
 a dash of salt and a sprinkle of balsamic vinegar.&#60;/p&#62;
&#60;p&#62;Heat oven to 425. Drizzle crust with olive oil and spread. Spread&#60;br /&#62;
evenly with onion and fennel mixture. Distribute roasted veggies, and&#60;br /&#62;
then goat cheese. Bake for 12 minutes on an oven rack (or a pizza stone&#60;br /&#62;
if you are using dough) or until slightly browned.&#60;/p&#62;

1 carrot, finely diced&#60;br /&#62;
1 stalk celery, finely diced&#60;br /&#62;
1/2 large onion, finely chopped&#60;br /&#62;
2 cloves garlic, finely chopped&#60;br /&#62;
1 tbsp tomato paste&#60;br /&#62;
1/2 tsp cumin&#60;br /&#62;
several sprigs of your favorite fresh herbs – I use rosemary, thyme, and/or sage&#60;br /&#62;
bay leaf&#60;br /&#62;
1 can whole fire roasted tomatoes&#60;br /&#62;
1/2 lb dry white beans&#60;br /&#62;
5 cups water or 4 cups water and one cup chicken broth.&#60;br /&#62;
1 bunch kale, stemmed and coarsely chopped.&#60;br /&#62;
1 lb shrimp&#60;br /&#62;
2 tbsp butter&#60;br /&#62;
seasoning to taste&#60;br /&#62;
balsamic vinegar to taste&#60;/p&#62;
&#60;p&#62;Rinse beans and add to slow cooker on low with herbs, water and or/broth, and can of tomatoes with juices.&#60;/p&#62;
&#60;p&#62;Heat olive oil in a dutch oven and add tomato paste and cumin,&#60;br /&#62;
stirring until slightly dark and caramelized. Add carrot, celery, onion,&#60;br /&#62;
 and garlic and sauté until soft and slightly browned. Add vegetables to&#60;br /&#62;
 slow cooker and allow to cook until beans are soft. Stir occasionally.&#60;br /&#62;
6-8 hours. (You can speed this up if you turn it to high). Remove herb&#60;br /&#62;
stems and bay leaf. Add kale on top and allow to steam for about 10&#60;br /&#62;
minutes, then stir in and allow to cook for another 5. You might want to&#60;br /&#62;
 turn the heat to high to help it wilt. When fully cooked, season broth&#60;br /&#62;
with salt and pepper to taste, and drizzle in about a teaspoon of&#60;br /&#62;
balsamic vinegar or to taste..&#60;/p&#62;
&#60;p&#62;Season shrimp to your liking – I just coat them lightly in Emeril&#60;br /&#62;
Spice – and melt butter in a large sauté pan. Cook until shrimp is pink&#60;br /&#62;
and lightly golden on both sides, turning after 2-3 minutes. Serve on&#60;br /&#62;
top of stew.&#60;/p&#62;

			<description>&#60;p&#62;I'm looking forward to seeing recipes from&#38;nbsp;those who are on board with a plant based whole food diet. We are not the types to jump on many dietary bandwagons. But anyone who is on this forum will likely agree that eating more fruits, veggies and whole grains is a good idea! I know they are out there, but it's a lot to scroll through.&#60;/p&#62;
&#60;p&#62;Soo if you are posting a recipe that has the following criteria, please tag with Plant-based...&#60;/p&#62;
&#60;p&#62;If it doesn't have a face or a mother, no added oil or processed foods. &#60;/p&#62;

&#60;p&#62;We used this weeks box (Items noted with *)&#38;nbsp;to make a variation of our favorite lettuce wraps... However, we used cabbage* to wrap instead of iceberg lettuce. Not as crunchy and refreshing, but they held together so much better and tasted great! &#60;/p&#62;
&#60;p&#62;Filling:&#60;/p&#62;
&#60;p&#62;In a small pan, cook 1/2 c. thinly sliced carrots* in 1/2 c. water until all the water cooks away. &#60;/p&#62;
&#60;p&#62;While that cooks,&#38;nbsp;cook in another pan, TVP reconstituted with low sodium veg broth (or 1 lb. ground meat... just not at our house), 1 c. mushrooms (sliced), 1 can sliced water chestnuts, drained, 3 cloves minced garlic, 2 Tbsp fresh ginger, 1/3 cup teriyaki (low sodium), 3 Tbsp peanut butter, 1 Tbsp rice vinegar, 1/4 cup hoisin sauce, 1/2 cup sliced green onion*. Add the carrots when they are cooked.&#60;/p&#62;
&#60;p&#62;When all this is cooked together, fill the cabbage leaves with it and some rice and we even added a little steamed, chopped chard* since we had it on hand for a little extra flavor and nutrients. YUM&#60;/p&#62;
&#60;p&#62;It seems like a lot of ingredients, but it's just a dump it together in the pan kinda meal. Delicious!&#60;/p&#62;

&#60;p&#62;Directions:&#60;br /&#62;In a small bowl, whisk the olive oil, vinegar, soy sauce, sesame oil, honey, curry powder and toasted cumin until well blended. &#60;br /&#62;&#38;nbsp;&#60;/p&#62;
&#60;p&#62;Place all the prepared vegetables into a large mixing bowl. &#60;br /&#62;Pour the dressing over and toss until well mixed and evenly coated. &#60;br /&#62;Season to taste with more soy sauce, vinegar and sesame oil if needed. &#60;br /&#62;Chill in the fridge for at least 15 minutes. &#60;br /&#62;Top with some toasted sesame seeds and serve.&#60;/p&#62;</description>

It was especially good on the second day, but needed to be thinned out just a little. We had it with toasted focaccia on the side and it was delicious.

			<description>&#60;p&#62;I recently tweaked my zucchini fritter recipe to include the DILL! that just came on the scene at JBG and since then I've been engaged in an unstoppable cycle of making and immediately eating these delicious squash fritters! &#38;nbsp;&#60;/p&#62;
&#60;div&#62;The batter also keeps well in a sealed container in the fridge. &#38;nbsp;Great for a quick, vegetable-rich breakfast or brunch!&#60;br /&#62;&#60;div&#62;&#60;br /&#62;&#60;/div&#62;&#60;div&#62;2 medium to large zucchini** coarsely grated (***feel free to substitute your favorite squash***)&#60;/div&#62;&#60;div&#62;1/2 cup feta cheese, crumbled&#60;/div&#62;&#60;div&#62;4 green onions, including green parts, chopped&#60;/div&#62;&#60;div&#62;3 tablespoons fresh mint, finely chopped&#60;/div&#62;&#60;div&#62;2 tablespoons fresh dill, finely chopped&#60;/div&#62;&#60;div&#62;1 large egg&#38;nbsp;&#60;/div&#62;&#60;div&#62;1/2 cup flour&#60;/div&#62;&#60;div&#62;4 tablespoons Panko break crumbs&#60;/div&#62;&#60;div style=&#34;text-align: left; &#34;&#62;salt (I prefer coarse sea salt)&#60;/div&#62;&#60;div style=&#34;text-align: left; &#34;&#62;olive oil&#60;/div&#62;&#60;div style=&#34;text-align: left; &#34;&#62;&#60;br /&#62;&#60;/div&#62;&#60;div style=&#34;text-align: left; &#34;&#62;first things first: wash and grate zucchini (skins and all). &#38;nbsp;Place in a colander and sprinkle with salt, allow the zucchini to drain while you prepare the other ingredients.&#60;/div&#62;&#60;div style=&#34;text-align: left; &#34;&#62;&#38;nbsp;&#60;/div&#62;&#60;div style=&#34;text-align: left; &#34;&#62;Mix together herbs, cheese and egg (lightly beaten). &#38;nbsp;Then add the zucchini a handful at a time, squeezing excess water out as you go. &#38;nbsp;Add flour and bread crumbs--the mixture should be moist but not watery. &#38;nbsp;&#60;/div&#62;&#60;div style=&#34;text-align: left; &#34;&#62;&#60;br /&#62;&#60;/div&#62;&#60;div style=&#34;text-align: left; &#34;&#62;To fry: &#38;nbsp;Heat up 1/8inch of oil in a pan and spoon fritter-sized portions of your batter. &#38;nbsp;Let fry for about 3 minutes until brown, then flip and cook the other side. &#38;nbsp;Serve hot with tzatiki sauce! Stir in the tomatoes, honey, carrots, sweet potatoes, &#38;nbsp;dried apricots, and lentils (add optional potatos and can of garbanzo beans drained). Bring to boil; reduce heat to low.&#60;/p&#62;
&#60;p class=&#34;p2&#34;&#62;&#60;span class=&#34;s1&#34;&#62;&#60;b&#62;4. &#60;/b&#62;&#60;/span&#62;Simmer stew for 30 minutes or until the vegetables and lentils are cooked and tender. Season with black pepper to taste. If desired, combine optional cornstarch and water; stir into stew. Simmer until stew has thickened, about 5 minutes.&#60;/p&#62;

&#60;li&#62;1.5 lbs&#38;nbsp; Butternut Squash, halved and seeded. Drizzle with coconut oil and baked until softened. Scrap out the meat.&#60;/li&#62;
&#60;li&#62;3 large eggs&#60;/li&#62;
&#60;li&#62;3/4 cup packed light-brown sugar&#60;/li&#62;
&#60;li&#62;1/2 cup full fat coconut milk&#60;/li&#62;
&#60;li&#62;1 tsp grated fresh ginger&#60;/li&#62;
&#60;li&#62;1/4 tsp salt&#60;/li&#62;
&#60;li&#62;1/4 tsp ground nutmeg&#60;/li&#62;
&#60;/ul&#62;

&#60;ol&#62;
&#60;li&#62; place squash in food processor and process until very smooth,  about 1 minute. I use a blender wand.&#60;/li&#62;
&#60;li&#62;add eggs, brown sugar, coconut milk, fresh ginger,  salt, and nutmeg; process until smooth.&#60;/li&#62;
&#60;li&#62;place cooled crust on a rimmed  baking sheet and pour filling into crust.&#60;/li&#62;
&#60;li&#62;bake until set, 35 to 40  minutes. let cool 1 hour at room temperature, then refrigerate to cool  completely, at least 1 hour.&#60;/li&#62;
